Well friends, this week was a wild ride as far as weather goes. Monday night into Tuesday morning it was 68 degrees with tornado warnings. Thirty-six hours later, the temperature was back down to the teens, and it was snowing.
The abrupt return of the cold made for a perfect opportunity for some nice warm comfort food. And what better comfort food to combat the cold than a nice meatloaf and veggies!
I’ve gotta be honest, this was one of the best meatloaves(loafs?) that we’ve ever made. The seasoning was on point and it was the right meal at the right time:
And now the budget breakdown, proving you can eat well even on a budget:
~$2.00 : 1lb of ground beef (we got it on sale)
~$.10 : 1 egg for the meatloaf
~$.20 : 1 onion (some in the meat loaf and some with the veggies)
~$.20 : 2 potatoes
~$.20 : 2 carrots
~$.60 : can of corn
~$.40 : small can of tomato sauce
~$3.70 Total for our dinner (and leftovers!)
You know, we’re not the only ones who love meatloaf…
