Best Thing I’ve Eaten This Week

Alright sports fans, it’s been a while, but we’re back.  This one will be short and sweet, but fear not, I’ve got a couple of other post ideas swirling and in the works.  More on those is coming soon!

This week’s winner is fairly straight-forward, but that doesn’t make it any less tasty.  It’s a good old fashioned pasta salad!  Pasta salad is one of my favorite things to make soon after grocery shopping, because we always make sure to stock up on veggies.  And if you’re a fan of pasta salad, then you know that the more veggies, the merrier!  It’s also a great meal to have when it starts getting warm outside because it is so light and fresh.  Really just can’t beat it!

Can’t be any easier… Just chop all of your favorite veggies, then combine them with some tri-colored rotini (doesn’t even have to be tri-colored).  Add a bit of seasonings, some Italian salad dressing (or a favorite vinaigrette) and some Parm cheese and you’re set!

There you have it.  Fresh and delicious.  With hopefully enough to last for a few days worth of lunches!

    Help! I’ve seemed to have misplaced my bottle of “Seasonings.” Any suggestions on a substitute? Also, mine always comes out super crunchy. Am I missing something here?!?!
