Best Thing I’ve Eaten This Week

I feel like I may have missed a week or two since I’ve last posted on “Best Thing I’ve Eaten This Week” but fear not, it’s here now!  There have been plenty of tasty treats since my last post – including a few visits to various restaurants (whoa there fancy guy!) – but I’ve whittled (you’re welcome for that) down the field to two:

Here we have a delicious (nearly) blackened tilapia with asparagus and a baked potato topped with salsa (sound weird – maybe, but don’t knock it until you’ve tried it!).  The real star of the dish here was the asparagus – sauteed in butter with some garlic salt, and a little bit of salt and pepper.  Super simple, but oh so yummy!

Side note: Really need to invest in a better camera…

Next, we have a special treat as well – Italian night!  This one was a bit more involved than the above meal…  Em kick-started the Italian-inspired meal when she decided that she wanted to bake something (she really enjoys baking, but with just two of us, it doesn’t always make a lot of sense to bake).  She narrowed it down to a couple of options, but ended up deciding on some focaccia bread.  Thus, Italian night was born.

So Em made some delicious focaccia bread, and I went to work on the pasta – a rotini with meat sauce combo that we both enjoy.  Then we added a nice side salad and decided to have some vino to complete the theme (we really need to invest in some wine glasses…).

Well, I’m feeling generous, so although pasta night was fun and themed, I’ll allow the tilapia meal as an honorary winner as well.  Both were quite tasty.
