Move Out Meal

We are moving out and moving up.  The nice little one bedroom house we are moving into will be a vast improvement from our current, one bedroom apartment lifestyle.  So are we excited? Yes.  Are we excited about moving stuff? No.  As I’m sure anyone who’s done it knows, moving stuff is not always the most pleasant experience.  That being said, we’re making a lot of progress and enjoying the process (as much as possible)!

While we decided to try not to go to the grocery store much during this time (who wants to buy a bunch of food only to have to move it from one place to another!?), we have managed to have some fun and pretty tasty meals.  We have looked at some of our ingredients a little more creatively than usual in order to put together some tasty meals, and here is one of them:

Movin’ Out Mashed Potato and Ham Casserole

5-6 potatoes (we had half a sack we’ve been trying to use before moving out!)

~1/2 lb. deli ham (we had leftover lunch meat to get rid of)

2 garlic cloves

1/2 an onion (red or white) – could probably use a whole onion depending on size

1 can of corn

mozzarella cheese (would also be good with cheddar, but we had mozz to use up)

fresh chives

Milk and butter for mashed potatoes

Simply make your mashed potatoes as you normally would with your potatoes, milk, and butter.  Then add some salt, pepper, garlic salt, and onion powder.  Add in your diced garlic and diced onion to the mashed potatoes and mix them in.  Add about half of the deli ham that you have shredded/chopped and about half of the can of corn and fold this into the mixture of mashed potatoes.  Then take your mashed potatoes and transfer them into a casserole pan (maybe something just smaller than a typical 9×13 with this amount of potatoes).  Top that with a thin layer of cheese, the extra ham and corn, and your chopped fresh chives.  Pop it in the oven for just long enough for the cheese to melt (~10mins) and you’re set. (Tip: If you like for your cheese to be slightly browned/crusted, then after the cheese has melted, broil it for 4-5minutes.)
