It’s been a few weeks since I’ve done an installment of “Best Thing I’ve Eaten This Week,” which is not to say that I haven’t had anything tasty recently. But there’s no better time than the present to give a quick update, and it’s especially good timing since we recently just made something new that was quite delicious!
This week’s winner: Szechuan Beef and Broccoli on Rice
We found some nice, pre-cut stewing beef which worked perfectly. We did a quick marinade of some soy sauce, vegetable oil, a bit of corn starch, red pepper flakes, and some minced garlic.
We let the meat sit and marinade while we worked on chopping up some onion and broccoli.
We put the meat into a skillet to cook, and when it was nearly done we added in the broccoli and onion. We then let that begin to cook together and added a little sauce to go with it: bit of sugar, pepper, water, oil, and some soy sauce. We mixed all of that together and covered to let it simmer until the broccoli was tender. We then served this over a bed of rice.
This was a perfect meal for the recent cold weather that we’ve been having. It was a nice hot meal that had a bit of heat – a perfect combination that made this the Best Thing I’ve Eaten This Week!
